Burbara Recipe Learn like a Pro 

Burbara, a creamy wheat berry pudding, is flavoured with spicy spices, anise, and fennel seeds and topped with almonds and dried fruit.  

– 1 cup pearled barley – 1 teaspoon ground cinnamon – 4 tablespoons brown sugar – 1 teaspoon anise seed – ½ teaspoon fennel seed – ½ cup chopped dried apricot – ½ cup raisins or dried cherrie – pomegranate seeds for garnish – nuts of choice for garnish

After boiling over medium-high heat, lower the heat and cover to simmer for 20 minutes, stirring occasionally.

Remove the top and mix in the sugar, fennel, anise, and cinnamon seeds. Add the dried fruit and stir.

Continue cooking and stirring for 15–20 minutes until the barley is soft. The barley mixture will be creamy and the dried fruit luscious.

Spoon the burbara into serving bowls and sprinkle with the almonds, additional dried fruit, and pomegranate seeds.
